takes 50 minutes (with soaking etc.)
for 4 persons
Ingredients
4 tbs olive oil
1 small onion, finely chopped
2 carrots, peeled and diced
1/2 small cauliflower, divided into small florets
50 g peas
50 g string beans, cut into small pieces
2 middle-sized potatoes, peeled and diced
100 g leek, finely sliced
2 tbs tomato purée
1.5 l vegetable stock
salt
pepper
chopped parsley

Preparation
Heat the oil in a pot.
Add the vegetables and sweat gently for about 5 minutes.
Add the tomato purée and stir well.
Add the vegetable stock and salt and pepper.
Cook for 15 – 20 minutes or until the vegetables are soft.
